Why You’ll Love

  • It is easy to make. The main ingredients are eggs and feta cheese. You can add your favorite toppings.
  • It is nutritious.Eggs are high in protein and vitamin D. They sure help you keep full for a while. Feta cheese is also high in protein.
  • It’s Low in carbs. It is diabetic-friendly. If you watch your carbohydrate intake, you can eat it as is or serve it with a low-carb pita or cauliflower pita instead of the French baguette.

Ingredients

  • Eggs: Are high in protein, vitamins, and minerals and are an essential source of vitamin D & B12.
  • Cheese: Feta cheese is high in protein and calcium. If you are watching your salt intake, an excellent way to reduce the salt in feta cheese is to soak it in milk or water for a few hours.
  • Fruits: I added black olives to this recipe because they add a mildly sweet and fruity flavor. Black olives are also high in vitamin E. If you are watching your salt intake, you can soak the black olives in cold, fresh water for a few hours to reduce the sodium.
  • Seasoning: I used salt, pepper, and red pepper flakes.
  • Toppings: Garnish it with some fresh basil. It adds a sweet, savory flavor.

How To Make

  • In a non-stick pan on medium heat, add a drop of olive oil, add a handful of feta cheese in a circle, and let the feta cook for 2-3 minutes.
  • Add a handful of kalamata olives in the middle of the circle, then crack in two eggs.
  • Season your eggs with 1/8 tsp red pepper flakes, sea salt, and pepper. Let it cook for 1 minute, then cover it with a lid for 2-3 minutes until the eggs reach your desired doneness.
  • Once the eggs are ready to eat, serve them with your choice of bread. I served mine with a French baguette. Garnish it with some fresh basil.

Popular Substitutions & Additions
